The Ecology of Food Talk
I was invited to give a speech on March 10th 2023, about the “Ecology of Food” and the future food trends at the Industrial Technology Research Institute, Taiwan.
I shared how I decided to change my office work career to devote to the food revolution by participating the Jamie’s Italian chained restaurant in Taiwan. Then in 2022, I started to focus on my food education under Charles Michel’s influence of promoting the conscious eating.
In the speech I demonstrated a series of my observations about the connection between food and the environment. Explained and shared how the concept relates to not only personal and social health, but also is important to our homes and animal welfares. By presenting facts of my experiences, I led the participants to re-examine the actions such as our choices of purchase, having a better consumption behavior, avoiding ingredient packaging and food waste. Finally, how food directly affects the balance of our body, mind and soul.
After the speech, I also designed and presented a French truffle mustard egg salad dish. I introduced some unique local ingredients (the fruit cucumbers, and the newly-developed current tomatoes, they were extremely cute and delicious!) which I found from the small farmers in Taiwan, and led the participants to make theirs with their own designs. I was extremely blessed to be able to spread what I believe and started see the changes in those who I have encountered, in hope to invite more people to build a more intimate connection with food as my motif.
